Baingan Bhaji is the simplest snack we can make for the evening tea-time, especially during the rainy season, when we crave something. In fact, there are a lot of varieties of bhaji’s, like Mirchi Bhaji, Egg Bhaji, aloo bhaji, etc. In these recipes, if you want, you can add ginger-garlic paste according to your taste.

  • 1 cup Gram Flour
  • Salt (to taste)
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Ajwain
  • Coriander Leaves
  • 1 Egg Plant (sliced into thin pieces)
  • Oil (for frying)
  1. Take a bowl and add gram flour, salt, red chilli powder, ajwain, turmeric powder and chopped coriander leaves and mix well.

  2. Now by adding little water and make a thick paste.

  3. Heat oil in a pan for deep frying the bhajis.

  4. Now take egg plant pieces and dip them into a batter, then drop them into the oil very slowly.

  5. Fry them until the bhajis become golden brown in colour.

  6. Now take them out on a paper towel to drain excess oil, then serve hot.

  7. Serve hot with green chutney or tomato ketchup.
