Baingan Bhaji is the simplest snack we can make for the evening tea-time, especially during the rainy season, when we crave something. In fact, there are a lot of varieties of bhaji’s, like Mirchi Bhaji, Egg Bhaji, aloo bhaji, etc. In these recipes, if you want, you can add ginger-garlic paste according to your taste.
Take a bowl and add gram flour, salt, red chilli powder, ajwain, turmeric powder and chopped coriander leaves and mix well.
Now by adding little water and make a thick paste.
Heat oil in a pan for deep frying the bhajis.
Now take egg plant pieces and dip them into a batter, then drop them into the oil very slowly.
Fry them until the bhajis become golden brown in colour.
Now take them out on a paper towel to drain excess oil, then serve hot.
Serve hot with green chutney or tomato ketchup.
