Rice is the seed of a monocot plant, Oryza sativa or African rice. As a cereal, it is eaten by many people across the world in Asia and Western countries especially because they find themselves at home with its flavor. Rice has become one of our favorite meals to eat which creates an issue when something goes wrong during production causing shortages for consumers who have come so accustomed to eating this grain-like food on regular occasions!

Rice comes from seeds that are found within plants called "monocots". There are two types: Asian and African rice but both share some similarities like being most popular as staples foods all over the world since their cultures incorporate them into everyday life - thank goodness too.

Carrot Rice is a very delicious and nutritious recipe. This is good for health as carrot is full of Vitamin A, Vitamin C, Vitamin K, beta-carotene and fiber content & good source of antioxidant agent. Children love to eat this rice, as it is a dish with nice flavor & colorful look. It becomes more rich & yummy with adding of groundnut.

  • 2 cups Basmati Rice
  • 1/2 tablespoon Coriander Seeds
  • 3/4 teaspoons Cumin Seeds
  • 2 teaspoons Coconut (grated)
  • 4 Red Chillies
  • 2 teaspoons Groundnuts
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Ginger-Garlic Paste
  • 2 teaspoons Oil
  • Cinnamon (small piece)
  • 2 Cloves
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dal
  • 1 teaspoon Chana Dal
  • Curry Leaves
  • 2 Onions (chopped)
  • 5 Carrot (grated)
  • Salt (to taste)
Instructions
    Method
  1. First cook rice & let it cool for sometime.

  2. Heat oil in a pan. Add red chilies, coriander seeds, and cumin seeds and fry till it turns brown. Add grated coconuts and remove from the heat. Let it cool down & grind it to fine powder.

  3. Then fry the groundnut & grind into course powder.

  4. Heat oil in a pan. Add cloves, cinnamon, mustard seeds, udad dal and channa dal Fry them.

  5. Add curry leaves and chopped onions. Once the onion turns to golden brown color, add the grated carrots. Fry till the carrots are cooked.

  6. Add rice and fry in a low flame. Add salt and the above ground masala powder. Mix it well with the rice.

  7. Finally add groundnut powder and remove from the flame.

  8. Carrot rice can be served hot with any curry or raita or dal.

If anybody wants sour taste then add 2 tsp of lemon juice.
