Cooked Rice Murukku

Murukku is a savoury, crunchy Indian snack that starts with rice and urad dal flour. It derived its name from the Tamil word for "twisted", referring to it's shape which often has twists in two different directions. Murukku can be found all over India but especially popular in states like Karnataka, Kerala, Andhra Pradesh and Telangana - where peanuts are included too!

This recipe is done from cooked rice. Normally murukku is done with milled rice flour, but this recipe is done from leftover cooked rice. Leftover rice can be used in many ways, one way this murukku. The rice murukku recipe from leftover rice is simple and easy to make and will make a nice snack.

  • 1 cup Cooked Rice (grinded into paste without using water)
  • 1-2 tablespoon Urad Dal
  • 3 tablespoons Gram Flour
  • Oil
  • Salt (to taste)
  • 1 teaspoon Sesame Seeds
  • 1 pinch Asafoetida

    Method
  1. Mix ground rice with urad dal, gram flour, salt, sesame seeds, asafoetida. If the dough is sticky grease your hand with oil and if need add gram flour. See that the dough is thick to be filled in a murukku achu (a device that has a design through which dough comes out and a handle that presses the dough through the design)

  2. Heat oil in a Kadai. Fill a handful of dough in the achu and press the handle over the oil so the dough comes out through the design. Circle your hand over oil so that murukku spread all over the oil.

  3. Cook on both sides and drain the oil and remove it on a plate.

  4. Repeat this process for all dough.

  5. Crisply cooked rice murukku is ready for snacking with hot tea/coffee.
