Idli is a traditional Indian dish that consists of savoury rice cakes made from fermented black lentils and rice. It can be eaten for breakfast or as an evening snack in Southern India or Sri Lanka, alongside chutney (which may range from sweet mango to spicy chilli). Idli is one of many variations on dosas: it's also typically dense with air pockets inside which make them light-weight and fluffy while still being crispy outside because they're steamed instead of grilled like pancakes.
