The most popular version of upma is made with whole or refined ground semolina out of durum wheat. Sometimes a wide range of vegetables may be added to the dish, and it can also be garnished with beans (raw or sprouted) cashew nuts and peanuts for variety. The Indian name 'upma' means "cooked in water" and this particular variation has become very popular not only in India but throughout various parts around the world as well! Masala Upma is known as Khara bath in Karnataka.

Khara bath is one of the popular breakfast recipes in South India, especially in Bangalore. In this recipe, we are using a lot of vegetables making it a healthy breakfast option.

  • 1 cup Sooji
  • 3 cups Water
  • 1 Carrot (finely chopped)
  • 1 Capsicum (finely chopped)
  • 2 Tomato (chopped)
  • 1 Cauliflower (chopped)
  • 1/4 cup Oil
  • 2 Onions (finely chopped)
  • Salt (to taste)
  • 3 Green Chillies
  • 2 Red Chillies
  • Cashews (optional)
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Ginger garlic Paste
  • 1 teaspoon Urad Dal
  • 1 pinch Asafoetida
  • Coriander Leaves (fresh and for garnish)

    Method
  1. Heat oil in a heavy bottom pan. Add mustard seeds, cumin seeds, and hing into it.

  2. After they start spluttering, add chopped onions and green chillies. Let them fry for some time.

  3. Then add ginger and garlic paste and saute it for 1 minute. And then add all the vegetables except tomatoes.

  4. Fry the vegetables until half did. Add tomatoes and fry till the oil separates from it.

  5. Now add water and let them boil. Then add salt and suji into the water and keep stirring in medium flame.

  6. Finally add coriander leaves, cashew nuts and serve hot.

  7. Serve with coconut chutney.
