Kuzhi Paniyaram

Kuzhi Paniyaram is a South Indian dish made by steaming batter using a mould. It can be sweet or spicy depending on the ingredients used and how it's cooked, so Paddu tastes different in each region of India (Kannada: ಪಡ್ಡು). Sometimes called "guliyappa" if served with jaggery syrup and sometimes referred to as "paniyaram," these savoury pancakes are often eaten for breakfast but have also been enjoyed before going out at night-time celebrations such as weddings(Malayalam: പणी) .

Description

This is a fried snack recipe done with rice and urid dal. Rice is rich in carbohydrate, urid dal gives protein, ginger added improved digestion. Paniyaram recipe is given below.

  • 1 cup Rice
  • 1/4 cup Urad Dal
  • 1 Ginger slice about 1 inch
  • 2 Green Chillies
  • 1 pinch Asafoetida
  • Oil (for frying)
  • Mustard Seeds (for garnish)

    Method
  1. Soak rice and urid dal together for 1/2 hour.

  2. Grind smoothly along with salt, ginger, green chili to dripping consistency.

  3. Remove in a vessel and add pinch sodabicarb and asafoetida. Heat oil, add mustard seeds. When it splutters remove and pour in batter.

  4. Heat oil in a kadai. Take batter in a small round ladle and pour it in hot oil until oil holds. Cook on both sides by stirring with flat ladle until brown.

  5. It will be crisp outside and soft inside. Serve hot with coconut chutney.
