Description

The vegetables and rice are cooked with thick coconut milk in this recipe. Mixed vegetable rice as the name suggests has all the vegetables of choice and is highly nutritious. It is cooked only with thick coconut milk, without adding water and is slightly spiced. Coconut milk is good for people who are trying to reduce weight. This colorful rice can be enjoyed with onion and cucumber raitha.

  • 1 cup Rice
  • 2 teaspoons Green Peas
  • 1 Carrot (chopped)
  • 1/2 cup French Beans (chopped)
  • 1 Potato
  • 1 Tomato (chopped)
  • 2 teaspoons Sambhar Masala
  • 2 cups Thick Coconut Milk
  • 1 Onion (chopped)
  • 5 Garlic Cloves
  • 1/2 teaspoon Mustard Seeds
  • Few Curry Leaves
  • Coriander Leaves (chopped for garnish purpose)
  • 1 tablespoon Refined Oil

    Method
  1. Wash and soak rice for 15 minutes. Heat oil in a pressure cooker. Crackle mustard and add onions, garlic and curry leaves. Fry for sometime.

  2. Add vegetables one at a time and mix well. Add tomato and sambhar powder. Fry for 3 minutes till the masala is coated to the vegetables.

  3. Now vegetables are half cooked. Add rice and mix. Prepare coconut milk by grinding fresh coconut with very little water. Strain the milk and discard the pulp. Add coconut milk and salt. Pressure-cook the rice till it is done (for about 20 min).

  4. Garnish with chopped coriander and serve.
