Fried rice is a dish of cooked rice that has been stir-fried in a wok or frying pan and often mixed with other ingredients such as eggs, vegetables, seafoods, or meat. Cooked rice can be the primary ingredient which will have myriad additional ingredients to add flavor including onions for extra taste; shallots are also usually added along with scallions (green onion) leeks and garlic for an even better tasting meal.
This ‘Cauliflower Fried Rice’ is a slight variation of the regular one. Small florets are fried in oil till crisp and then added to the rice. The taste of rice with crunchy cauliflower in each bite is scrumptious.
In a mixing bowl mix together cauliflower, corn flour, maida, red chilli powder and salt with some water. Drop these florets in hot oil and fry till crisp. Take them on a plate and keep aside.
In another pan heat 4 tsp oil and fry carrots, 2 tbsp spring onions and green chillies for a while.
Then add rice, pepper powder and salt. Mix well. Stir in chilli sauce, soy sauce and fried cauliflower and mix well. Sauté on a low flame for 2-3 minutes
Garnish with the remaining spring onions and serve hot.
