Citrus salads or fruit salads with citrus fruits are a great option for winter. When tomatoes and other vegetables can't be found, the sweet taste of oranges is refreshing in any season! Citrus provides that fresh feeling you need on those cold nights where it's just too easy to hunker down inside all night long watching old movies instead of going out.

This recipe is a mix of my favorite citrus salads, and it's perfect for any dinner or brunch. It highlights the best fruit from this season while being full of crisp, aromatic elements to accentuate its sweet taste. With some farro on the side or roasted chickpeas on top as well- you'll want to eat this salad all day long!

Description

Citrus salad is a refreshing salad. Mint and curd used in this salad have a cooling effect and is very effective in summer. Whole-wheat pasta with the fruits and vegetables makes it a satisfying dish.

Ingredients
  • 3/4 cups Curd (Thick low fat)
  • 7-10 Mint Leaves
  • 1/2 teaspoon Mustard Powder
  • Sugar and Salt to taste
  • 1/2 cup Whole wheat pasta cooked
  • 1 cup Coloured Capsicum (chopped)
  • 1 cup Carrot and Spring Onions (chopped)
  • 2 Oranges & Sweet Lime Segment
Instructions
  1. Make a mint dressing of curd, mint leaves, mustard powder, sugar and salt.

  2. In a big bowl mix cooked whole-wheat pasta, capsicum, carrot and spring onions, orange and sweet lime wedges.

  3. Refrigerate them. Before serving, toss them well with some mint dressing.
