Description

The national dish of Gujarat, Dhoklas are a delicious and healthy snack. They're made out of lentils like Chickpea, Pigeon pea, and Urad which resemble the shape after they've been cooked down. To make them you need to mix water with rice flour, so it'll ferment slightly before cooking in an oven or steamer. It's important not to use too much yeast if using that method as this will lead your doughy balls to become sour. You can eat these for breakfast on your own or pair them up with some chutney. Ingredients
    Ingredients For Dhokla
  • 1 cup Rava /Sooji
  • 1 cup Thick Curd
  • 1/2 teaspoon Sugar
  • 1 teaspoon Ginger (grated)
  • 1 teaspoon Chili Paste
  • 2 teaspoons Oil
  • Salt (to taste)
  • 1/4 cup Water (as required)
  • 3/4 teaspoons Baking Soda (can use 1 tsp of ENO for the fermentation of the Rava)
  • 1/2 cup Onions (chopped)
  • Ingredients For Tempering
  • 2 teaspoons Oil
  • 1 teaspoon Mustard Seeds
  • 1/2 teaspoon Cumin Seeds
  • 1/2 teaspoon Sesame Seeds
  • 1 pinch Asafoetida
  • Curry Leaves
  • 2 Green Chili (slit)
  • 2 tablespoons Coriander leaves

    Instruction
  1. First, in a bowl, take rava and curd. 

  2. Add sugar, ginger, chili paste, onion, and salt. Mix well to form a thick batter.

  3. Rest it for 30 minutes or until the rava has absorbed all of the moisture. Add water as needed to the batter and mix well again.

  4. Get the dhokla to the consistency of idli batter. 

  5. Add ENO fruit salt. Mix until it is frothy. Pour into a greased plate. Steam for 12 minutes.

  6. Heat oil in a pan or wok and cook cumin seeds, mustard seeds, curry leaves, onions, ginger garlic paste till they are golden brown.

  7. Add some mustard seeds. And green chili. Saute the mixture for a bit. 

  8. When it starts to make popping sounds, add green curry leaves and hing. 

  9. Put the mixture on top of the dumpling.

  10. To make dhokla, put the coriander leaves on top. 

  11. And cut it into the shape you want to serve it. 

  12. Finally, serve the soft and spongy dhokla with green chutney.
