Payasam is a type of pudding made by boiling milk, sugar, and rice. It has many variations including substituting the rice with one or more ingredients such as bulgur wheat, millet, tapioca vermicelli sweet corn. Desiccated coconut cardamom raisins saffron cashews pistachios almonds are all common additions to this traditional Indian dish served for breakfast lunch dinner dessert.
This is dessert recipe done using splint moong dal and jaggery and used cardamom for flavoring and cashews and any nuts for garnishing. This is rich in protein from moong dal, iron from jaggery, calories and protein from nuts and cardamom helps in digestion. This makes this a tasty healthy dessert. Recipe of paruppu payasam.
Boil 2 cups of water in a pan and when it boils well put split moong dal and cook until tender but do not mash too much.
Dissolve jaggery in 1/2 cup of water, strain to remove dust and heat this jaggery water on a stove and boil for some time.
Then add the cooked moong dal (along with water if any) stir well and cook until they combine and becomes thick.
Add cardamom powder and garnish with nuts and serve hot or cold. It can be served with cream or milk or can be had as it is.
