This recipe is a main course dish with rice and vegetables.  This is ideal for lunch and dinner where we need nutrition as well as taste and this recipe gives both.  Try this spicy vegetable rice recipe.

Method

  1. Cut all vegetables to even-size cubes and boil with green peas until soft and keep aside.  Boil with less water so that water is not wasted or try to use it in some other way.

  2. Cook rice with less water than usual so that each grain should be separate/half cook and keep aside.

  3. Heat oil in a kadai and Fry onions until golden brown.  Add ginger-garlic paste and fry well.  Add mint leaves and fry for 2-3 minutes.  Add turmeric powder.

  4. Add all the boiled vegetables.  Mix well and add salt per taste.

  5. Add the powder spices and mix well.

  6. Cook until there is no water and the mixture is dry.

  7. Mix rice with this and mix everything together well.

  8. Take this in a vessel which has tight lid on it.

  9. Heat water in a vessel that is bigger than the vessel with rice it.  Place this vessel in the water and cover with lid and place a weight over it so that it does not shake while the water is boiling.

    If it is possible you can close the bigger vessel also, otherwise, it is fine as far as the inner vessel is tightly closed and with weight over it. 

  10. Simmer the stove and leave it for 5-10 minutes.  After five minutes open the vessel stir the rice so that all part is cooked. Repeat this process in another five minutes.

  11. Now double-boiled spicy vegetable rice is ready for you to serve.  Onion raitha goes well with this or serve with any side-dish of your choice.
