Spicy Vegetable Rice RecipeSpiced rice is a specialty of Kerala, but can also be found in many parts of India. It’s often called “neyichoru” or “spicy rice,” and it has an intense flavor thanks to the use of ghee as its primary ingredient. This dish varies depending on where you’re from – for example, it might include peas and tamarind paste if made by someone who came from south India (such as Karnataka).

If it is possible you can close the bigger vessel also, otherwise, it is fine as far as the inner vessel is tightly closed and with weight over it.
Simmer the stove and leave it for 5-10 minutes. After five minutes open the vessel stir the rice so that all part is cooked. Repeat this process in another five minutes.
Now double-boiled spicy vegetable rice is ready for you to serve. Onion raitha goes well with this or serve with any side-dish of your choice.
